Instructions

Step 1 - Marinating the Beef: Okay, let's start by getting that beef ready to soak up all those amazing flavors. Grab a bowl and toss in your beef along with a pinch of salt, just enough to lightly season it. Add a pinch of white pepper for a subtle kick, then pour in about a teaspoon of sesame seed oil which will give it that lovely nutty aroma. Next, crack in half an egg to help tenderize the beef and make everything stick together nicely. Sprinkle in some corn starch; this will help create a silky texture when cooked. Finally, add a tablespoon of oil to keep things moist. Now, give everything a good mix with your hands or a fork until the beef is thoroughly coated and looking glossy. Let this marinade sit for at least 10 minutes so the flavors have a chance to work their magic.

Step 2 - Boiling the Noodles: Now, bring a large pot, about 6 quarts,of water to a rolling boil. Once it's bubbling away, add your noodles and make sure they are fully submerged under the water. Here's the secret: boil the noodles on high heat for just about 10 seconds. Yes, only 10 seconds! This quick blanching is enough to soften the noodles without overcooking them. Right after, strain the noodles immediately to stop the cooking process. Then rinse them under cold water to cool them down and prevent them from sticking together. This also helps keep your noodles nice and springy when you stir fry later.

Step 3 - Stir Fry: Time to bring this dish to life! Heat up 2 tablespoons of oil in a wok or a large pan over high heat. When the oil is shimmering hot, add your marinated beef in a single layer. Let it cook undisturbed for a bit, just until it's about medium cooked through and has a lovely sear. This will take a couple of minutes. Once the beef is looking beautifully browned, scoop it out and set it aside on a plate for now.

Next, back to the wok with another 2 tablespoons of oil. Toss in your onions, minced garlic, and minced ginger. The smell at this point will be amazing, those aromatics really build the base of flavor here. After about 30 seconds or so, add your bean sprouts, mushrooms, and peapods. Pour in about 1 and a half cups of water, or just enough to cover the vegetables. This will help steam and soften them gently while keeping everything nice and juicy.

Once the veggies have softened a bit but still retain some crunch, add your noodles right into the wok. Now, let's bring it all together with the sauce. Pour in the oyster sauce for that savory depth, add another pinch of white pepper, drizzle a teaspoon of sesame seed oil for fragrance, a sprinkle of sugar to balance the flavors, and a teaspoon of soy sauce to add that salty umami punch. Give everything a good toss so the noodles and veggies are evenly coated in this delicious sauce.

Finally, return the cooked beef back into the wok and stir fry everything together for another minute or two. This last step warms the beef through and allows all those flavors to mingle beautifully. Once everything looks shiny, well mixed, and irresistible, you're ready to serve up your homemade beef lo mein. Enjoy every bite of those tender beef pieces, crunchy veggies, and perfectly sauced noodles!
