Bobotie
South African spiced minced meat dish with a creamy egg topping and dried fruit
The Method
Instructions
First things first, go ahead and preheat your oven to 180°C . This will give it plenty of time to get nice and hot so your bobotie cooks evenly and beautifully.
Now, take your bread and gently squeeze out the milk you soaked it in, but don't toss either away! You'll want to keep both the milk and the bread handy for the next steps because they add moisture and richness to the dish.
Next, heat a bit of oil in a large frying pan over medium heat. Once your oil is shimmering, add the chopped onions and sauté them slowly until they turn soft and translucent . This should take about 5 to 7 minutes and will bring out their natural sweetness, which is really important for the flavor base.
Once the onions are soft, toss in the minced garlic, curry powder, and turmeric. Give everything a good stir and cook until you can smell those warm, fragrant spices filling the kitchen, usually about a minute or so. This step really wakes up the spices without burning them.
Now it's time to add the ground beef. Break it up with your spoon or spatula and cook it until it's nicely browned all over . This will take around 8 to 10 minutes. Browning adds so much depth to the flavor, so don't rush this part!
Once your beef is browned, stir in the squeezed bread, along with the raisins, chopped dried apricots, chutney, vinegar, brown sugar, and a good pinch of salt and pepper. Mix everything together thoroughly. Let this mixture cook gently for about 5 minutes so all those sweet and tangy flavors meld beautifully with the meat and spices.
Now, transfer your delicious mixture into a baking dish, spreading it out evenly. Press a few bay leaves right into the top of the meat mixture, they add such a lovely aromatic note when baked, and they look pretty too!
In a separate bowl, whisk together the eggs and the reserved milk until smooth and slightly frothy. This will form a lovely custard topping for your bobotie. Carefully pour this egg and milk mixture over the meat in the baking dish , making sure it seeps into all the nooks and crannies.
Sprinkle slivered almonds evenly over the top for a bit of crunch and a pretty finish. Now, pop your dish into the oven and bake for 35 to 40 minutes . You'll know it's ready when the custard is set and the top turns a beautiful golden color. You might even catch the wonderful aroma filling your kitchen at this point!
Serve your bobotie warm, ideally with fluffy yellow rice and some sambals on the side to add a fresh, vibrant contrast. Enjoy every comforting, flavorful bite of this South African classic!
