The Method

Instructions

Alright, first things first, grab a good non stick saucepan and add in the sweet, creamy condensed milk, the rich cocoa powder, and a nice knob of butter. Give everything a good stir right away to make sure there are no lumps hiding in there. You want a smooth, silky mixture before you start cooking.

Now, place your saucepan over medium low heat. This is important because you want to cook the mixture gently so it doesn't burn or stick. Grab a wooden spoon or a heatproof spatula, and start stirring constantly. The mixture will feel pretty thin at first, but hang in there, because it's going to slowly thicken up as you cook it. Keep that stirring going, this part takes some patience, but it's worth it!

Continue cooking and stirring for about 10 to 15 minutes. You'll notice the mixture getting thicker and thicker. You'll know it's ready when it starts to pull away from the bottom and sides of the pan, and when you stir, you can actually see the bottom of the pan for a moment. At this stage, the brigadeiro should be really thick and fudgy, almost like a soft dough.

Once it's reached that perfect thickness, transfer the mixture to a plate that you've lightly buttered. This step helps the brigadeiro from sticking as it cools. Let it cool down to room temperature, which usually takes around an hour. If you're in a bit of a hurry, you can pop it in the fridge to speed things up, just keep an eye on it so it doesn't get too hard.

When the mixture is cool enough to handle, give your hands a little rub with some butter, this helps prevent sticking and keeps things nice and smooth as you roll. Then, scoop out some of the brigadeiro and roll it into small balls, about 2 centimeters across. It's okay if they aren't perfectly round; the homemade charm is all part of it!

Next up, roll each ball in chocolate sprinkles until it's completely coated. This adds a lovely texture and a little extra chocolatey fun. Once coated, place each brigadeiro in a small paper cup. This makes them look adorable and keeps them from sticking together.

Finally, store your brigadeiros in the refrigerator until you're ready to serve. You can enjoy them chilled or bring them to room temperature for a softer bite. Either way, they're absolutely delicious and sure to bring a smile to anyone's face!
