Instructions

First things first, go ahead and preheat your oven to 200C if you're using a conventional oven, or 180C if you have a fan oven. If you're cooking with gas, set it to gas mark 6. This way, the oven will be nice and ready to give your hotpot that lovely golden finish.

Now, grab a medium sized saucepan and pop it on the hob over a medium heat . Add your butter and let it melt gently until it's all smooth and shimmering. Then, toss in your chopped onions. Let those onions cook away for about 5 minutes , stirring now and then so they soften evenly and start to turn sweet and translucent. You'll know they're ready when they smell fragrant and have lost their raw bite.

Next up, add your mushrooms to the pan with the onions. Stir everything around nicely so the mushrooms begin to release their lovely earthy juices and soften just a bit. Keep cooking until the onions and mushrooms are almost fully cooked through , this usually takes another few minutes. You'll want the mixture to be tender but not mushy.

Once the onions and mushrooms are looking good, it's time to stir in the flour. This part is important because it forms what's called a roux , a thick paste that will help your sauce thicken beautifully. Give everything a good stir so the flour coats the mushrooms and onions evenly. If you're using a stock cube, crumble it into this roux now and mix really well to combine the flavors.

Turn your heat down to low and keep stirring the roux continuously for about 2 minutes . This step is key because it cooks the flour enough that your sauce won't end up with any floury taste. You'll notice the mixture getting a bit thicker and smoother as you stir , that's exactly what you want.

Take the saucepan off the heat for a moment. Now, very slowly add your fresh stock if you have it, or if you've used a stock cube, pour in about 500ml of water . Keep stirring all the time as you pour, so the liquid mixes in gradually and your sauce stays nice and smooth without lumps.

Once you've added all the liquid, season the sauce with freshly ground pepper, a pinch of nutmeg, and a sprinkle of mustard powder. These little touches really bring out the classic British hotpot flavors. Return the pan to a medium heat and gently bring the sauce up to a boil, stirring constantly. You'll see it start to thicken , that's when you know it's almost ready.

When the sauce has thickened to a creamy, gravy like consistency, turn the heat down to very low to keep it warm. Stir in your cooked chicken and any vegetables you're adding, like sweetcorn, making sure everything is coated in that rich sauce. Give it a good mix so the flavors meld together beautifully.

Next, take a medium size ovenproof pie dish and give it a nice rub with a bit of butter. This will stop your hotpot from sticking and add a bit of extra buttery goodness to the edges. Pour the chicken and mushroom filling into the dish, spreading it out evenly.

Now for the topping , carefully arrange your sliced potatoes on top of the filling. Overlap them slightly, almost like you're making a pie crust but with potatoes instead of pastry. This creates a lovely, rustic finish that gets golden and crispy in the oven.

Brush the potato layer generously with some melted butter. This little step helps them brown beautifully and adds extra flavor. Pop your hotpot into the preheated oven and bake for about 35 minutes . You'll know it's ready when the potatoes are tender and have a gorgeous golden brown color on top. The bubbling sauce underneath will smell amazing and be perfect for scooping into.
