Instructions

First things first, let's get the dressing going. In a small bowl, combine all your dressing ingredients and give them a good mix. Season it with a pinch of salt and some freshly ground black pepper to taste. Set this lovely dressing aside for now so the flavors can mingle while you work on the rest of the dish.

Next up, bring a large pot of salted water to a boil and cook your linguine pasta according to the packet instructions. When there's just about a minute left on the pasta's cooking time, throw in the sugar snap peas. This way, they'll stay nice and crisp but still get nicely warmed through. Once everything is cooked, drain the pasta and sugar snaps well and set them aside for a moment.

While the pasta is cooking, grab your wok or a large frying pan and heat up a generous splash of olive oil over a medium heat. Toss in the finely chopped garlic and sliced red chilli, and gently cook them for about 30 seconds. Be careful to keep the heat moderate so the garlic softens and releases its wonderful aroma without turning brown or bitter,this step really builds the flavor base.

Now, crank up the heat to high and add the king prawns to the pan. Keep them moving by stirring frequently. You'll want to cook the prawns for around 3 minutes, just until they turn a beautiful pink color and are cooked through but still juicy and tender.

Once the prawns look perfect, add the cherry tomatoes to the pan. Stir them occasionally over the heat for about 3 minutes, just until they start to soften and release their sweet juices. This adds a lovely fresh burst of flavor to the dish.

Now it's time to bring everything together. Add the drained pasta and sugar snap peas directly into the prawn and tomato mixture. Tear in the fresh basil leaves with your hands,it's always nicer to tear basil rather than chop it as it releases more of its fragrant oils. Give everything a good stir so all those flavors marry beautifully. Taste and season with a little more salt and pepper, if you feel it needs it.

To serve, pile your chilli prawn linguine onto plates and arrange some crisp salad leaves alongside.
