Instructions

First things first, grab your toor dal and give it a good wash under cold running water. Then, soak it in about 3 cups of water for at least one hour. You'll notice the dal swells up and roughly doubles in size as it soaks, which is totally normal and exactly what you want. Once it's done soaking, drain off the water and set the dal aside for cooking.

Now, take a pot and add the soaked dal along with 2 and a half cups of fresh water. Toss in some salt and a pinch of turmeric for that lovely color and flavor. Turn your stove to medium high heat and let the dal cook gently. You're aiming for a soft, tender texture that's almost like a thick soup, so it'll take about 30 minutes. Keep an eye on it and give it a stir every now and then so it doesn't stick to the bottom. The aroma as it cooks is going to start filling your kitchen and it's just wonderful.

While the dal is simmering, let's move on to the flavorful seasoning. Heat your ghee in a frying pan over medium heat. Once it's nice and hot, add the cumin seeds and mustard seeds. Wait patiently until these seeds start to crackle and pop , this is where the magic begins! Then, add the bay leaves, sliced green chili, finely chopped ginger, and a sprinkle of chili powder. Stir everything together for just a few seconds until you can really smell all those spices waking up. It's a beautiful, fragrant moment.

Next, toss in the chopped tomatoes along with a pinch of salt and sugar. Stir well and let the mixture cook down until the tomatoes become soft and mushy. This usually takes a few minutes, and you'll notice the tomato juices thickening up into a rich, luscious base.

Now, sprinkle in the fresh chopped cilantro and a good pinch of garam masala. Give it all a good stir and let it cook for about one more minute so the flavors have a chance to meld together perfectly.

It's time to bring it all together! Pour this wonderful spiced tomato mixture over your cooked dal and stir everything really well so the dal soaks up all those delicious flavors. Let it cook for another minute or so, just to make sure it's heated through and perfectly combined.
