Step 1 - Making the sauce: Alright, let's start by getting that flavorful sauce going. Grab a medium bowl and pour in 2 cups of water . Then, add 2 tablespoons of soy sauce and 2 tablespoons of white vinegar ,these will give the sauce that perfect balance of salty and tangy. Next up, splash in some sherry cooking wine to add a subtle depth and sweetness. Sprinkle in about a 1/4 teaspoon of white pepper for a gentle kick, then toss in some freshly minced ginger and garlic, which bring that wonderful aromatic warmth. If you like a bit of heat, add your favorite hot pepper; it gives the sauce a nice little edge. To round it all off, add in some ketchup and hoisin sauce for sweetness and richness, plus a bit of sugar to balance everything out. Give it all a good stir until everything is nicely combined, then set this tasty mixture aside for now.

Step 2 - Marinating the chicken: Next, let's prepare the chicken. Take your chicken breast pieces and place them in a clean bowl. Season with a pinch of salt and a pinch of white pepper, just enough to enhance the flavor without overpowering it. Now, add 2 egg whites ; these help give the chicken a light, crispy coating when fried. Finally, add 3 tablespoons of cornstarch , which is key to that signature crispiness. Use your hands or a spoon to gently mix everything together, making sure the chicken pieces are evenly coated with the marinade. Let it sit for a few minutes while you get your oil heated up.

Step 3 - Deep frying the chicken: Time to get crispy! Heat your oil to 350 degrees Fahrenheit ,if you have a thermometer, fantastic, if not, you can test by dropping a small piece of batter and seeing if it sizzles right away. Carefully add the chicken pieces to the hot oil, making sure not to overcrowd the pan so they cook evenly. Fry them for about 3 to 4 minutes , or until they turn a beautiful golden brown color and are cooked through. While frying, gently stir or shake the basket or pan occasionally to loosen the pieces so they don't stick together, this keeps each bite perfectly crisp. Once they're done, remove them and set aside on a paper towel lined plate to drain any excess oil.

Step 4 - Stir frying: Now for the finishing touch! Place your wok or a large pan back on the heat and pour in that sauce you made earlier. Add in some broccoli or your favorite veggies, whatever you like to add crunch and color. Let the sauce come to a boil; you'll see it bubble and steam, which means all those flavors are coming together beautifully. To get the sauce just right and a little glossy, whisk together 2 tablespoons of cornstarch and 4 tablespoons of water in a small bowl until smooth. Slowly pour this mixture into your stir fry bit by bit, stirring constantly, until the sauce thickens up to your liking. Then, toss in the crispy chicken pieces and stir everything together for about a minute, just to heat the chicken through and coat it nicely in that sauce. Once everything looks glossy and delicious, serve it up on a plate, garnish with some spring onions if you have them, and enjoy your homemade General Tsos Chicken!
