Gigantes Plaki

Traditional Greek baked giant lima beans in a rich tomato sauce with herbs, olive oil, and aromatic vegetables. This hearty vegetarian dish requires overnight soaking but develops deep, complex flavors through slow baking and makes an excellent meze or main course.

The Method

Instructions

First things first, take your butter beans and soak them overnight in plenty of cold water. This helps to soften them up and get them ready for cooking. The next day, drain the beans and give them a good rinse under cold running water. Pop them into a large pan and cover them with fresh water. Now, bring that water to a gentle boil over a medium high heat. Once boiling, turn the heat down to low and let the beans simmer for about 50 minutes. You want them to be slightly tender but still holding their shape, not too soft or mushy. When they're just right, drain the beans and set them aside for now.

While the beans are simmering or once they're done, go ahead and preheat your oven to 180 degrees Celsius (or 160 degrees Celsius fan oven , gas mark 4 ). Now, grab a large frying pan and pour in a good glug of olive oil. Heat it gently over a medium heat until it's shimmering but not smoking. Toss in the chopped onion and minced garlic clove, and cook them slowly for about 10 minutes. You want them to soften and become fragrant, but don't let them brown or burn,that would change the flavor in a way we don't want here. iThe smell of the garlic and onions cooking gently is just the best, isn't it?i

Once those are soft and lovely, add your tomato purée to the pan. Stir it in and let it cook for about a minute to get rid of any raw tomato taste and deepen the flavors. Then add in the rest of your ingredients,this includes the chopped tomatoes, cinnamon, dried oregano, and just a pinch of sugar to balance the acidity. Give everything a good stir, then lower the heat and let it simmer gently for 2 to 3 minutes. This little simmer lets all those beautiful Mediterranean flavors start to marry together. Don't forget to season it generously with salt and freshly ground black pepper at this point,taste and adjust as you go!

Now, gently fold your cooked butter beans into the tomato sauce mixture, making sure each bean gets coated in that rich, herby, slightly spiced sauce. Once everything is combined, pour the whole mixture into a large ovenproof dish, spreading it out evenly. Pop it into your preheated oven and bake it uncovered for about an hour. During this time, the beans will continue to soften until they're perfectly tender and will soak up all those fabulous flavors from the sauce. You'll notice the sauce thickening nicely as it cooks, turning into a deliciously rich coating for the beans. iNo peeking or stirring during the bake though, patience is key here to get that perfect texture.i

When the baking time is up, take the dish out of the oven and let it cool down a little. Before serving, scatter a generous handful of freshly chopped parsley over the top for a burst of freshness. Then drizzle a little extra virgin olive oil all over to add a lovely glossy finish and extra depth of flavor. Serve this warm or at room temperature, and enjoy the comforting, hearty taste of classic Greek Gigantes Plaki. It's one of those dishes that's even better the next day, once the flavors have fully developed!
