Instructions

Start by heating a good splash of olive oil in a large saucepan over a medium heat. While the oil is warming up, grab some kitchen scissors to snip the bacon into small, bite sized pieces right into a bowl, or if you prefer, use a sharp knife on a chopping board to chop it finely. Once your oil is hot and shimmering just a little, add the bacon pieces to the pan. Let them cook for a few minutes, stirring occasionally, until they start to turn a lovely golden brown and release that irresistible smoky aroma.

Next, it's time to add the onion, celery, and carrot. Make sure you've diced these up nicely so they cook evenly. Toss them into the pan with the bacon and keep the heat at a comfortable medium. Let everything cook together for about 5 minutes, stirring every now and then. You want the vegetables to soften and become fragrant without browning too much just yet.

Now, crush or finely chop the garlic and add it to the pan. It only needs about a minute to cook, just long enough to get beautifully aromatic , don't let it brown or burn! As soon as you smell that garlic goodness, it is time to tip in the minced beef. Break it up with a wooden spoon as it cooks, stirring and turning it over for about 6 minutes or until it is browned all over and no pink remains. This step builds a rich flavor base, so be patient and enjoy the sizzle.

Once the beef is nicely browned, stir in the tomato purée. Let it cook for about a minute, mixing it thoroughly with the beef and vegetables so it gets toasty and develops a deeper flavor. Then pour in the chopped tomatoes. To make sure you don't waste any of that tomato goodness, fill the empty tomato tin halfway with water, swirl it around, and tip that into the pan too. Add a good drizzle of honey to balance the acidity of the tomatoes, and season generously with salt and pepper to taste. Turn the heat down to a gentle simmer, cover partially, and let it bubble away for about 20 minutes. You'll know it's ready when it's thickened into a rich, hearty ragu sauce.

While your sauce is simmering and filling the kitchen with amazing smells, preheat your oven to 200C (that's 180C fan or gas mark 6 ). When you're ready to assemble, ladle a small amount of that ragu sauce into the bottom of your roasting tin or casserole dish. Spread it out with the back of the spoon so the base is well coated , this helps keep the pasta from sticking later on.

Lay down two sheets of lasagne pasta over the sauce. It's okay if they overlap a little; you want to create a good even layer. Then spoon more ragu on top of the pasta, spreading it evenly to cover. Repeat this layering process two more times , pasta, sauce, pasta, sauce , building up those glorious layers. Finish off with a final layer of pasta sheets on top.

Now for the creamy topping , pop a few tablespoons of crème fraîche into a small bowl. Add about 2 tablespoons of water to it, and stir gently until it loosens into a smooth, pourable sauce. Pour this over the top layer of pasta, spreading it out evenly so it seeps into the edges and adds a lovely creaminess as it bakes. Tear or slice your mozzarella balls and scatter them across the top, then generously sprinkle grated Parmesan cheese over everything. This will create that irresistible golden crust.

Slide your assembled lasagne into the preheated oven and bake for about 25 to 30 minutes , or until the top is beautifully golden and bubbling away. You'll know it's ready when you see those lovely brown spots on the cheese and the sauce bubbling at the edges. Let it rest for a few minutes before serving , this helps it set so it's easier to cut.
