Massaman Beef curry
A rich Thai curry featuring tender beef braised in coconut milk with aromatic massaman curry paste, potatoes, and roasted peanuts. This mildly spiced curry offers complex flavors with a hint of sweetness and creamy texture from coconut milk.

First things first, go ahead and preheat your oven to 200C (or 180C fan , gas mark 6 ). While it's warming up, spread your peanuts out evenly on a baking tray. Pop them into the oven to roast for about 5 minutes , just until they turn a lovely golden brown and start to smell nutty and toasty. Keep a close eye on them because nuts can go from toasted to burnt pretty quickly! Once they're cool enough to handle, roughly chop them up,don't worry about making them perfect, a rustic chop adds a nice texture to the curry. Now, turn your oven down to 180C ( 160C fan , gas mark 4 ) so it's ready for the next step.
Next, grab a large casserole dish that has a lid, and heat about 2 tablespoons of coconut cream over a medium heat. You want it warm and silky but not boiling. Stir in your massaman curry paste and let it fry gently for about 1 minute . This frying helps the paste release those amazing spices and aromas that make this curry so special. Once it's fragrant, add the beef into the pot. Give it a good stir to make sure every piece is well coated in that rich, spicy paste. Fry the beef just long enough to seal in the juices, which usually takes a few minutes, until the edges start to brown nicely.
Now, pour in the rest of the coconut cream along with about half a can of water,this will create the luscious curry sauce. Toss in your potatoes and sliced onion, and don't forget the lime leaves, cinnamon stick, tamarind paste, brown sugar, fish sauce, and most of those chopped peanuts you roasted earlier. Stir everything together so all the flavors get to know each other. Bring the mixture up to a gentle simmer on the stovetop, then cover the casserole with its lid and transfer it to the oven. Let it cook low and slow for about 2 hours ; this is where the magic happens and the beef becomes wonderfully tender, soaking up all those rich, complex flavors.
