This step adds such a refreshing zing that will balance beautifully with the creamy coconut milk later on.

While the fish is marinating, heat up a large skillet or, if you have one, a lovely oven safe clay pot which is traditional for moqueca. Add a bit of oil and gently sauté thinly sliced onions, colorful bell peppers, and juicy tomatoes over medium heat. Stir them occasionally; you want the veggies to soften and meld together, releasing their sweet, savory flavors into a rich base , this usually takes around 8 to 10 minutes. The kitchen will start smelling amazing!

Now, nestle the marinated fish pieces right on top of your sautéed veggies. Pour in the creamy coconut milk, which will add that luscious, velvety texture and mellow sweetness to the dish.
