Instructions

First things first, grab an 8 inch square baking pan and line it with some wax paper or foil. Make sure to cover the sides as well so the fudge comes out easily later on. Once that's done, spray the lining lightly with some non stick spray. This little extra step will help your fudge release perfectly without any sticking or tearing , super helpful when you're ready to dig in!

Next, take about half a cup of those cute little miniature marshmallows and sprinkle them evenly across the bottom of your prepared pan. This will add a lovely, gooey texture to the bottom layer of your fudge and give it that classic Rocky Road charm.

Now, onto the melty magic. Grab a microwave safe bowl and toss in your chocolate chips along with the peanut butter. This combo is where all the creamy, nutty goodness starts happening. Pop the bowl into the microwave and heat it in 20 second bursts. Between each interval, give it a good stir. This helps your chocolate melt evenly and keeps it from burning or clumping up. You'll know it's ready when everything is nice and smooth, with a glossy shine.

Once your chocolate and peanut butter mixture is perfectly melted and silky, stir in the vanilla extract. This little splash adds a warm, fragrant depth to the fudge that makes it taste extra special. Mix it until everything is beautifully combined and smooth.

Before we fold in the nuts, set aside about 2 tablespoons of chopped almonds or peanuts. These will be sprinkled on top later for a nice crunchy finish, so keep them handy. Now, fold the remaining chopped nuts together with 1 and a half cups of the miniature marshmallows right into your chocolate mixture. Take your time folding gently so the marshmallows stay fluffy and don't get crushed , this keeps your fudge nice and chunky with those soft marshmallow pockets.

Once everything is well mixed, pour the chocolatey goodness into your prepared pan. Use a spatula or the back of a spoon to spread it out evenly so it sets with a nice flat surface. After it's fully set, remove the fudge from the fridge. Carefully lift it out of the pan by grabbing the edges of the wax paper or foil. Then, gently peel all the wax paper away from the fudge. Try to be patient here so the fudge doesn't stick or break apart.
