Salmon Avocado Salad
Pan-seared salmon served over fresh greens with sliced avocado, cucumber, and a tangy dressing. This healthy and colorful salad combines protein-rich fish with creamy avocado for a nutritious and satisfying meal.

Instructions
First things first, grab your salmon fillets and give them a good seasoning with salt and pepper, or whatever you like to bring out that lovely fish flavor. Then, take a little olive oil and rub it all over the salmon. This not only helps the seasoning stick but also gives the fish a nice golden finish when it cooks.
Next, let's get that dressing going. In a small bowl, whisk together the honey, lime juice, a splash of olive oil, and some chopped mint leaves. The honey adds a gentle sweetness, the lime gives a fresh zing, and the mint brings a lovely herbal note that ties everything together. Give it a good stir until it's all combined and set it aside for now.
Now for the avocados. Carefully halve each one, then scoop out the stone. Use a spoon to gently peel off the skin,you want to keep the slices nice and neat. Slice the avocado into even pieces; the creamy texture will really complement the freshness of the salad. For the cucumber, cut it in half lengthwise, then quarter each half lengthwise again before slicing into smaller pieces. This gives you lovely bite sized chunks that are crisp and refreshing.
Get four plates ready and divide your bed of spinach evenly among them. Then, sprinkle the avocado slices and cucumber pieces on top. Pour over about half of your homemade dressing, letting it soak into the spinach and veggies, bringing everything to life with that sweet and tangy flavor.
Now it's time to cook the salmon. Heat a non stick pan over medium high heat,you want it hot but not smoking. Place the salmon skin side down (if it has skin) and cook for around 3 to 4 minutes. You're aiming for a beautiful crisp outer layer. Then, carefully flip the fillets and cook for another 3 to 4 minutes on the other side. The salmon should be crisp on the outside but still lovely and moist inside, just how we like it.
When the salmon is done, gently place one fillet on top of each salad plate. Drizzle the remaining dressing over the salmon and salad. Serve these beauties warm so you get that wonderful contrast between the hot salmon and the cool, fresh salad underneath. Enjoy every bite!
