Tahini Lentils
A healthy Middle Eastern-inspired dish combining lentils and fresh vegetables with a creamy tahini dressing. This nutritious one-pan meal features kale, green beans, and courgette in a lemony tahini sauce.

Instructions
First up, grab a jug and combine your tahini with the zest and juice of the lemon. Pour in about 50ml of cold water to loosen it up and create a nice, runny dressing. Give it a good stir until everything is smooth and well mixed. Then, don't forget to season it with a pinch of salt or a little pepper if you like, tasting as you go to get it just right. Once it's perfect, set this lovely dressing aside for now,it's going to bring everything together later.
Now, heat some olive oil in a wok or a large frying pan over a medium high heat. When the oil is nice and hot, toss in the sliced red onion along with a pinch of salt. Let it fry gently for about 2 minutes, stirring occasionally. You'll want to cook it just until it starts to soften and develop a little colour,that's when it really releases its sweetness and aroma.
Next, add the garlic, sliced yellow pepper, green beans, and courgette to the pan. Keep stirring frequently as they cook together for about 5 minutes.
