Instructions

First things first, go ahead and preheat your oven to 180C (or 160C fan if you have a fan oven) or gas mark 4 . This way, the oven will be perfectly ready for when your meatloaf is shaped and seasoned. While that's heating up, pour a good splash of olive oil into a large frying pan and gently warm it over a medium heat. Once the oil is shimmering, add your chopped onion and let it cook slowly for about 8 to 10 minutes . You want the onion to soften beautifully and turn translucent, maybe even getting a little bit golden around the edges. This will release all those sweet, mellow flavors that make the base of your meatloaf so tasty.

Next, toss in the garlic along with the Worcestershire sauce and about 2 teaspoons of tomato purée . Give everything a good stir so the garlic gets coated in those lovely savory juices and the tomato purée blends in nicely. Let this mixture cook for another minute or so just to bring all those flavors together, then take the pan off the heat and set it aside to cool down a bit while you get the rest of the ingredients ready.

Now, grab a large mixing bowl and add your turkey mince, the egg, and the breadcrumbs. Be sure to toss in the cooled onion and garlic mixture as well. This is where your hands come in handy,mix everything together gently but thoroughly, just until all the ingredients are combined. Don't overwork the meat or it might end up a bit tough. Once it's nicely mixed, shape the mixture into a neat rectangular loaf. Place this carefully into a large roasting tin, making sure it's sitting comfortably and evenly.

Here comes a little extra flavor punch,take about 2 tablespoons of barbecue sauce and spread it evenly over the top of the meatloaf. This will caramelize beautifully in the oven and add a smoky, tangy glaze. Pop the roasting tin into the oven and bake the meatloaf for 30 minutes . This initial baking helps the loaf start to set and develop a lovely crust on top.

While the meatloaf is baking away, grab your two cans of cannellini beans. Drain just one of them, then pour both the drained and undrained beans into a large bowl. Add the remaining barbecue sauce along with the rest of the tomato purée. Season this bean mixture with a little salt and pepper, then give it a gentle stir to combine. This will be a warm and comforting side to accompany your meatloaf, soaking up all those juices later on.

When your meatloaf has had its first 30 minutes in the oven, carefully scatter the bean mixture around the loaf, nestling them into the tin so they can cook and heat through alongside the meat. Pop everything back into the oven and bake for another 15 minutes . By now, the meatloaf should be cooked all the way through, its juices running clear when prodded, and the beans should be piping hot and infused with all those wonderful flavors.
