First things first, go ahead and preheat your oven to 200C if you're using a conventional oven, or 180C fan if you have a fan oven setting. For those using gas, set it to gas mark 6 . This will get everything nice and hot for cooking the vegetables perfectly.

Now, grab a nice sturdy casserole dish and add your chopped roasted vegetables into it. Pop that dish into the oven and let the veggies cook away for about 15 minutes . This gives them a chance to soften up and start to develop some lovely roasted flavors. While you wait, you might notice the aroma starting to fill your kitchen, which is always a good sign!

After those 15 minutes are up, carefully take the casserole dish out of the oven - it will be hot, so mind your fingers! Then, gently tip in the kidney beans and the chopped tomatoes.
