Instructions

First, grab your precooked cornmeal, also known as masarepa, and place it in a large mixing bowl. Warm up some water until it's comfortably warm to the touch, but not hot enough to burn your fingers. Slowly pour the warm water into the masarepa while stirring gently with your hands or a spoon. Add a pinch of salt to the mixture to enhance the flavor. Keep mixing until you get a soft, pliable dough that's not too sticky and holds together nicely. If it feels too dry, add a little more water, one tablespoon at a time; if it's too wet, sprinkle in a bit more masarepa.

Once your dough is ready, it's time to shape those arepas! Take a handful of dough and roll it gently between your palms to form a ball. Then press it down to create a thick patty, about half an inch to three quarters of an inch thick. Try to keep the edges smooth so they cook evenly and hold their shape well.

Heat a griddle or a heavy skillet over medium high heat. Once it's hot, place the arepas on the surface. You should start to hear a gentle sizzle,that's the magic beginning. Let them cook undisturbed until a nice golden brown crust forms on the bottom, usually about 4 to 5 minutes. Then carefully flip them over and cook the other side until it also develops a beautiful crust. This step is crucial because it seals in the moisture and builds that wonderful texture.

After the arepas are nicely browned on both sides, transfer them to an oven safe dish and pop them into a preheated oven at 350°F . Bake for about 15 minutes , which helps them cook through completely and become soft inside while staying crispy on the outside. This step also makes them easier to split open without crumbling.

When they're done baking, let them cool just enough so you can handle them without burning your fingers. Use a sharp knife to gently split each arepa horizontally, creating a pocket. Now comes the fun part,stuff them with your favorite fillings! Classic choices include melty cheddar cheese, creamy black beans, tender shredded beef, or fresh slices of avocado.
