Instructions

First things first, grab your cheddar cheese and cut it into sticks that are about 1cm thick and 8cm long . Try to keep them as even as possible so they cook uniformly. Once you have your cheese sticks, give them a gentle pat down with some paper towels to soak up any extra moisture. This is a little trick to help the dough stick better and to prevent the cheese from making the dough soggy while frying.

Next, take your puff pastry and roll it out on a lightly floured surface. You want to roll it out really thin, almost like a delicate sheet, so it crisps up beautifully. Once you have a nice thin sheet, cut it into long strips that are about 1cm wide and 30cm long . These strips will be the perfect size to wrap around your cheese sticks.

Now comes the fun part , wrapping the cheese! Take one cheese stick and start wrapping a dough strip around it in a spiral motion. Overlap the dough slightly as you go so that the cheese is completely enclosed. This helps keep the cheese from leaking out when it melts. When you get to the ends, gently press the dough down to seal it. This little step is super important to make sure your tequeños stay intact while frying.

Heat up some oil in a deep pan to a steady 180C (350F) . Using a thermometer is great here to keep the temperature just right. You want the oil hot enough to crisp the dough quickly but not so hot that it burns before the cheese melts. Fry the tequeños in batches, giving them a gentle turn every now and then, for about 3 to 4 minutes . You're aiming for a gorgeous golden brown all over, with that irresistible crunch on the outside.

Once they're beautifully golden, use a slotted spoon or tongs to lift them out and drain on some paper towels. This helps get rid of any excess oil so they aren't greasy. Serve your tequeños immediately while they're still hot and crispy. When you bite in, the cheese inside should be perfectly melted and deliciously gooey. For an extra touch of authentic flavor, serve them alongside some guasacaca, which is a zesty Venezuelan avocado sauce, or a garlicky dipping sauce. Trust me, these little bites are pure comfort food magic!
