The Method

Instructions

First, heat a generous knob of butter in a large, heavy bottomed pot over medium high heat. Once the butter is melted and starting to foam, add your beef chunks in a single layer. Let them brown undisturbed for a few minutes on each side until they develop a beautiful deep brown crust. This step is key because it builds the rich flavor base for your stew. Don't rush it; good browning takes time and patience.

Next, remove the beef and set it aside. In the same pot, add your sliced onions. You want to sauté them gently over medium heat until they become soft and caramelized , turning a lovely golden brown color. This can take about 15 to 20 minutes. Stir frequently to prevent burning, and keep an eye on the heat so the onions cook slowly and release their natural sweetness. The aroma of caramelizing onions will fill your kitchen and make your mouth water.

Once your onions are perfectly caramelized, add the beef back into the pot. Now, it's time to pour in your Belgian beer . The beer should just cover the meat and onions; this will create a rich, flavorful braising liquid. Add your bay leaves, a few sprigs of thyme, a bit of brown sugar to balance the bitterness of the beer, and a spoonful of mustard for a subtle tang. Give everything a gentle stir to combine all these wonderful flavors.

Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot partially with a lid to allow some steam to escape, and let it cook slowly for about 2 hours. Check occasionally, making sure the liquid is gently bubbling and the beef is becoming tender. The long, slow simmering is what makes the beef melt in your mouth and infuses the sauce with deep, comforting flavors.

After about 2 hours, test the beef for tenderness; it should be fork tender and easy to pull apart. If the sauce is a bit too thin for your liking, you can thicken it by increasing the heat slightly and simmering uncovered for a few more minutes until it reduces to a lovely, rich consistency. Taste and adjust seasoning if needed.

Finally, serve your carbonnade flamande hot and hearty, with a side of crispy fries or some crusty bread to soak up all that delicious sauce. This dish is perfect for cozy dinners and will surely warm up anyone at your table.
