Instructions

First things first, preheat your oven to 180C , or if you're using a fan oven set it to 160C , and if you happen to have a gas oven, go for gas mark 4 . While the oven is warming up, grab a baking tray that measures about 20 by 30 centimeters, and line it with baking parchment. This will stop the brownies from sticking and make it super easy to lift them out later.

Next, take a saucepan and add the dark chocolate, salted butter, and light brown soft sugar all together. Place the pan over a very gentle heat, and slowly melt everything while stirring occasionally with a wooden spoon. This part takes a little patience because you want the mixture to become smooth and glossy without burning, so keep the heat low and keep an eye on it. Once everything is melted and combined beautifully, take the pan off the heat.

Now, it's time to add the eggs. Crack them in one at a time, stirring well after each addition to make sure they're fully incorporated. This step is important because it helps create that lovely fudgy texture we all love in brownies.

To keep things smooth and avoid any lumps, sieve the plain flour and cocoa powder right over your chocolate mixture, then gently fold them in using your spoon or a spatula. You want to be careful here; just stir until everything is combined and you don't see any dry flour left. After that, toss in half of the fresh raspberries and fold them in gently too. These little bursts of fruit will make the brownies extra special.

Now, scrape all this gorgeous batter into your lined baking tray, spreading it out evenly so it bakes nicely. Take the remaining raspberries and scatter them over the top; they add such a pretty pop of color and a little tangy surprise in every bite.

Pop the tray on the middle shelf of your preheated oven and bake for about 30 minutes . If you like your brownies on the softer, fudgier side, this timing is perfect. But if you want a firmer texture, give them a bit more time and bake for an extra 5 minutes . Your kitchen will start to smell incredible as they bake, and you might find it hard to wait!

Once baked, take the tray out and let the brownies cool completely before slicing them into squares. This cooling step helps everything set up nicely so you get clean cuts. When you're ready to enjoy, keep any leftovers stored in an airtight container, and they'll stay delicious for up to 3 days . Perfect for sneaking in a treat or sharing with friends!
