The Method

Instructions

Start by cutting the doner meat into thin, bite sized strips. This will help the meat cook quickly and get those delicious crispy edges. Now, heat a good splash of oil in a frying pan over medium high heat. Once the oil is shimmering, add the meat strips and fry them for about 6 minutes , stirring occasionally. You'll know they are ready when they have a nice golden brown color and are cooked through, with some edges crisped up just right.

While the meat is cooking, get your fries ready. If you have a deep fryer, heat the oil to the recommended temperature, usually around 350°F to 375°F . Carefully add the fries and cook them until they turn a beautiful golden brown and are crispy on the outside but soft inside. This usually takes about 4 to 6 minutes , depending on your fries. Once done, drain them well and immediately transfer the fries to a baking dish. Try to spread them out evenly across the dish so every bite gets some fries love.

Next, grab the cooked meat strips and spread them evenly over the fries in the dish. This creates that perfect layering we want for our kapsalon. Now it's time for the cheese. Sprinkle a generous amount of Gouda cheese on top of the meat. If you prefer, you can grate the cheese first to help it melt faster and more evenly. Once the cheese is spread, place the baking dish into a preheated oven set to around 350°F for just a few minutes. Keep an eye on it and pull the dish out as soon as the cheese has melted into a gooey, delicious layer.

While the cheese is melting, chop up your fresh veggies. Dice the lettuce, tomato, and cucumber into small, bite sized pieces to keep that salad fresh and light. You can mix these together in a bowl to make a simple salad base. If you want to get a little fancy, add some sliced olives, jalapenos, or a bit of red onion for an extra punch of flavor and texture. This adds a nice contrast to the warm layers below.

Finally, spread the fresh salad mixture over the cheesy meat and fries layer in your baking dish. The cool crispness of the salad on top balances out the richness below perfectly.
